From Traveler Bill’s Test Kitchen – “Cook’s Country Best-Ever Hot Cocoa Mix”

Let me start by saying that I love everything to do with Cooks Illustrated.  Our TiVo has season passes for both ATK and Cook’s Country.  We have subscriptions to both Cook’s Illustrated and Cook’s Country magazine as well as an online subscription to Cook’s Illustrated.  I follow Christopher Kimball and America’s Test Kitchen’s Twitter feeds.   Finally I own the The Complete America’s Test Kitchen TV Show Cookbook: Every Recipe from the Hit TV Show, 2001-2011 and have The America’s Test Kitchen Family Cookbook 3rd Edition: Cookware Rating Edition in the mail on it’s way to me as I write this entry.

Having made several dishes from these various sources I have decided to reinvigorate the Test Kitchen of Traveler Bill Industries.  Today’s dish: Cook’s Country Best-Ever Hot Cocoa Mix (Traveler Bill’s Test Kitchen does not publish unadapted recipes without permission, and we’re too lazy to get permission.  However, you can get the recipe at the Cook’s Country website.  While the site does require a subscription, it can be accessed with a free trial.  That said, you can’t go wrong with a subscription. -Traveler Bill)

First step is to take some low-fat powdered milk in a large bowl.

Then add confectioner sugar.

Some Dutch Process Cocoa

A bunch of white chocolate. I used chunks not chips. Next time I’d use chips.

A smidge of salt.

Pulse in two batches. It took forever with the unevenly sized chunks.

Then heat up with a cup of milk.

Pour into your favorite mug.

And serve hot to your sweetie.

I have to tell you this cocoa is outstanding! It is rich and creamy and tastes fantastic with a scoop of vanilla ice cream or whipped topping. I cannot imagine that whipped cream or tiny marshmallows.
